  • Blind Ambitions

    This seminar sharpened tasting skills through structured blind flights and group calibration. Participants explored pattern recognition, varietal markers, and instinctive assessment. The goal was to craft a clinic to build sensory fluency while being mentored and informed by the wineries that crafted the wines.

    Stranger Vines

    This session spotlighted grapes far outside the mainstream. Attendees tasted varieties thriving in unfamiliar landscapes and uncovered how climate, culture, and innovation gave them a new home. The future of wine proved to be wider and perhaps stranger than expected.

    Under Pressure

    Sparkling wine was explored through the lenses of grape, method, and origin. Attendees unpacked how pressure, lees aging, and regional identity shaped everything from freshness to complexity. Producers showed that bubbles are just the beginning while the structure, story, and intent ran deeper.

    Icons of Italy

    Nebbiolo and Sangiovese were placed side by side vintage by vintage. The seminar unpacked structure, tannin, and tone through benchmark bottles from across Italy. Tradition and evolution did not compete, they informed each other to go deep into Italy’s two most famous graps.

    Will It Blend?

    This tasting examined how great wines are built by design. Producers broke down their blending approaches across soil, variety, vintage, and technique. The room saw how instinct, vision, and technical choice work in concert.

    Show Me the Whey

    In a wild and focused tasting, cheese, wine, and beer collided through the lens of texture. Attendees explored acid, fat, funk, and fermentation to understand how pairings elevate and challenge the palate. Benton Brothers brought the cheese and the producers brought the edge. It was structured chaos and deeply memorable.

    Riesling Roundtable

    This seminar traced Riesling’s identity across soil, slope, and style. Benchmark producers from BC and Germany poured benchmark expressions that revealed both purity and diversity. Attendees discussed how climate and intention shape expression. Every glass was a study in tension and light.

    Homeward Bound

    This session gathered winemakers helping to define the next chapter of British Columbia wine. Through rotating discussions and dynamic formats, the group explored identity, experimentation, and the creative friction of an evolving region ongoingly dealing with the elements of climate, demand, and innovation.

    Harvest Moon

    This seminar explored sustainable and biodynamic farming as more than a philosophy and more like a toolkit in action. Attendees learned how lunar cycles, preparations, and holistic practices impacted vine health, expression, and resilience. Wines poured were shaped by intention rather than intervention.

  • BIG NIGHT – Capo & The Spritz
    A wine-fueled homage to the cult classic movie Big Night. No timpano here, but plenty of Barolo, Chianti Classico, and endless pizza and arancini. Make sure you watch the movie before arriving.
     
    UMAMI TSUNAMI – Hapa Izakaya
    Boutique wines meet Japanese snack bar bites in the ultimate stay-drink-sip experience . Izakaya bites with salt, smoke, soy, paired with wines from BC, Chablis, Germany, and more.
     
    WINE & SWINE – The Flying Pig
    West Coast comfort bites served to highlight righteous wines poured by the people who made them from BC, Portugal, Australia, Germany and more! An event built for second helpings and generous pours.
     
    OFF MENU – Stockroom
    Yaletown’s top speakeasy cocktail den is quietly taken over by a lineup of wineries worth sneaking into the stockroom for. Taste incredible wines from Austria, Beaujolais, Portugal, BC and more paired alongside a range of speakeasy snacks.

    This tasting delivered a wide-angle view of French wine told through place, practice, and evolution.     Fine Wine Decline?

    In the face of shifting global consumption, this seminar examined how iconic regions and producers are reimagining their roles and production. Through benchmark wines, attendees saw how producers are adapting with bold communication, tourism strategy, and stylistic evolution. The session was not about decline, it was more about creative resilience and acknowledging what continues to work and drive wine culture

    Art of the Blend

    This seminar revealed how blending is about communication a vision.Producers shared how they combined variety, site, vessel, and instinct to achieve layered balance. From historic traditions to progressive techniques, every wine poured showed intentionality. Vision became structure in real time.

    Pinot Camp

    This was Pinot Noir told through three stories around the Top Drop campfire. Through candid conversation and soulful wines, producers shared how they work with this famously expressive and temperamental grape. The group explored nuance, transparency, and restraint across regions and vintages.

    Sangiovese Stories

    This session traced the breadth and depth of Italy’s most planted grape. Producers shared how soil, elevation, and philosophy shaped radically different expressions of Sangiovese. Each glass added depth to the grape’s story and revealed its flexibility, emotional resonance, and role in the modern wine narrative.
